When we were at the airport going home for graduation, we snagged a copy of Rachael Ray’s June 2013 magazine… partially because we had heard Kate Bingaman Burt had some illustrations inside and partially just because we wanted to try some new recipes.
So we made the “Thai It” Chicken Noodles with Lettuce, Chilies and Basil. We left out the chilies and the lettuce, but YUM! We’ve made a couple of variations on this dish since (with shrimp and quinoa for example).
PS. Don’t let the smell of the fish sauce scare you–it cooks out and just gives the dish a very finished taste.
